Garlic-butter
green beans.
Blister first, season later, finish with lemon. The aim is the first night's flavor with the second night's better texture—no extra pot of boiling water required.

The better-beans plan
0 of 5 done
Dry beans, hot pan
Heat olive oil over medium-high. Add dry beans in as close to one layer as possible. If the skillet is crowded, cook in batches. No lid yet.
Let them blister
Leave them alone for a few minutes, toss, then cook until browned in spots and still firm, about 6–8 minutes total as a starting point. Watch the beans, not just the timer.
Only if needed: a tiny steam
Try a bean. If the center is too raw, add just 1–2 tbsp water, cover for 1–2 minutes, then uncover and cook away every drop. Skip this if they're already where you want them.
Bring back the good flavor
Lower the heat. Add dairy-free butter, garlic, onion powder, smoked paprika, pepper, and optional chili flakes. Toss 45–60 seconds until the garlic smells good. Don't burn it.
Lemon last, then taste
Turn off the heat and add 1–2 tsp lemon juice. Flat? Pinch of salt. Needs pop? A touch more lemon. Already great? Stop messing with it and get the beans out of the pan.
The lesson: Night one used ¼ cup water and 4–5 minutes covered, which softened the beans more than we wanted. This version browns them before any optional, very short steam.
